Ingredients
2 chicken breasts, cut into 6 fillets
Mozzarella cheese
Parmesan cheese
Panko breadcrumbs
Tomato sauce
2 tbsp butter (melted) or olive oil
Salt and pepper, to taste
How to make it
Preheat oven to 400°F (200°C). Cut chicken breasts into fillets and season with salt and pepper.
Brush each fillet with melted butter (or olive oil). This step helps the coating stick.
In a bowl, combine panko breadcrumbs with grated parmesan. Coat the chicken fillets in the mixture.
Place the breaded fillets on a baking sheet and bake for 25 minutes.
Remove from oven and top each fillet with 1 tablespoon of tomato sauce and mozzarella cheese.
Return to the oven for 5 minutes, or until the cheese melts.
Garnish with fresh parsley and serve immediately.
